An impressive claypot filled with ikura and seasonal fish the likes of salmon and yellowtail, over a bed of rice that has been cooked in fish bone stock. The flavours are delicate and allow the seafood to take center stage.

A well-marbled bouquet of pink pork arrives at our table along with the oroshi hotpot, ready to be dunked into the sweet, soul-soothing broth packed with Japanese leeks, carrots and cabbage. I wish we had winters here so that I could enjoy a hot bowl inside on a bitterly cold evening outside.

For S$30.00, the Wagyu Cube Steak seemed to be a great dish for one or for sharing. Basically the steak was done in such a way that they managed to trap a lot of juiciness within from the high-heat grilling, before they were served with fried garlic chips and brown sauce, both of which add dimension to the already awesome meat.

When it was a sharing dish, I caught myself popping it into my mouth quite involuntarily, and that did not end even with the “paiseh” piece left. Oops!

No two ways about it, this bubbling hot pot of goodness was unabashedly beefy. Submerged under the rich, meaty demi-glace-esque stew was a soft, almost fall-apart hamburg patty that had absorbed the essence of the liquid it was cooked in. This definitely calls for a bowl of rice.

The balance of flavours and texture in these oysters from Mie prefecture is what makes them special – sweet, salty, chewy but tender. Even fried, they still retain their succulent, plump juiciness. Highly recommended.

If it isn’t already, teppan cheese should totally be a thing, because this was equal parts crisp, chewy and stretchy. Made from a blend of mozarella and cheddar, the cheese flavour came through strongly, and the filling of avocado and crunchy sakura shrimp was an interesting combination that worked.
