PSA the bar is walk in only, and you need to purchase dinner. Otherwise you can takeaway the cake

It's pretty tiny, the caramel is rlly mild so everything melds tgt well. There's a thin crispy layer in the middle which was pleasantly surprising. But overall very safe flavours, and not v intense so I wasn't particularly impressed, despite the promising combination.

Taking away takes awhile cos they make the chocolate curl from scratch. Abit pointless if you ask me, doesn't taste like much

There's also a bottom cookie layer which was terrible, tastes like cardboard.

A little bummed that The Bar at Waku Ghin has stopped the practice of simply serving up Patisserie Platine’s cakes before their official opening time at 5pm a couple of weeks ago — the only way to enjoy the Patisserie Platine cakes now is to have them either by takeaway, or to dine-in at the bar from 5pm, though by doing the latter, one will have to order minimally a bar snack from the hot food menu and will not be able to order just purely exclusively from the Patisserie Platine menu only. That being said, dining-in at The Bar at Waku Ghin is strictly on a walk-in basis only — so getting a seat here is almost guaranteed for those who are intending to drop by.

Being one of the new cakes in their refreshed line-up, the Caramel Chocolate Mousse with Spice Banana replaces the Blackforest, and is a twist to the Chocolate Mousse with Vanilla and Macadamia that I absolutely love here — so much that it probably is one of my creations from them. Whilst also featuring a chocolate element, the chocolate here takes a back seat as the caramel and banana elements are the stars of the show in this entremet; first taste into the cake and there is that rich caramel note that strikes immediately — one that is decadent, but seems to emphasise on those toffee-like notes and not so much of its sweetness. While at it, the familiar bittersweet notes of chocolate runs at the back of the tongue; provides a slight smokiness to the caramel mousse that makes the cake really alluring and intriguing — nothing quite like we have had before. What brings that light touch of sweetness to the cake is actually the banana purée hidden within the core of the cake; almost akin to that of mashed banana, one can notice shreds of fibre but we really enjoyed how it gave the cake a pretty balanced hint of sweetness that somewhat carried a consistency of flavour and texture across the entire cake — that usual intricacy and care for detail that goes into the Patisserie Platine line-up that makes their cakes so good.

I am always amazed by how Patisseire Platine’s cakes are such value-for-money for the quality that one is getting — at the price of $11 for this, there is no doubt that the cakes may be a little smaller than the same of most patisseries around, but the cakes here are nothing short of being sublime. Also interesting is how they have managed to keep things fresh here by always introducing a new flavour every now and then, or bringing back a classic one from during their days where the cakes were available at the Renku Lounge. Always excited to be back whenever the opportunity calls upon it (or when a friend suggests so 😂), but it is no doubt one of my favourite places for entremets around.

Patisserie Platine’s return to Waku Ghin at Marina Bay Sands is something which I had been quite excited about — had made multiple visits to savour their intricate cakes which both my friend and I just can’t get enough of. While classic items such as the Ghin Cheesecake wasn’t available previously when the concept made a comeback, I was glad that I finally could give the iconic item a try when they had brought it back in April 2021. That being said, I was a bit bummed that the Black Forest hadn't made a comeback — so after having missed it after they had announced it to be in their May 2021 line-up due to the implementation of Phase 2 (Heightened Alert), a trip had to be made when dine-in had resumed.

The Black Forest was the posterchild of Patisserie Platine when they had first launched the concept at Rise Lounge (subsequently renamed as Renku Lounge) — still remembered making my way down because of this particular item, and had the Chocolate Mousse with Vanilla & Macadamia during that first visit; both leaving a strong impression with the latter becoming Patisserie Platine’s signature offering, and also my go-to cake these days.

Featuring elements such as chocolate, dark cherry and pistachio mousse, I have always reckoned the Black Forest to be an interesting twist to a classic with a loose connection to the Neapolitan ice-cream; perhaps so given its distinctive layering of different mousses in its side profile. The stack of mousses is a consistently light, smooth and creamy layering of berry, pistachio and chocolate mousse — it’s a balanced mix of tart and bittersweet notes that sit atop a thin tart base that cracks neatly without much effort. The show-stopper here will be the kirsch-soaked dark cherry — chewing on the cherry reveals a burst of boozy flavours that coats the taste buds; something that those who love alcohol-heavy desserts will really appreciate. The Black Forest here isn’t complete here without the chocolate mousse that is encased in its own chocolate embellishment — the iconic aesthetic since Day 1; bittersweet chocolate that isn’t any bit overwhelming that finishes off the entire cake in terms of flavours and looks.

While the Chocolate Mousse with Vanilla & Macadamia is still my top choice here, the Black Forest still holds as an icon of Patisserie Platine — at least for me. Its the item that graced the cover photos of the various media coverages back then when Patisserie Platine first launched in 2015; a rather abstract conceptualisation of a classic cake that set Patisserie Platine apart from other patisseries in the day — and where my love for the brand had started. It’s good to see you finally back in the same glory where all has started; welcome back!
