Dry-Aged Beef Patty Topped with Classic Pull Prom, Canadian Bacon, Pickled Shallots, Honey Mustard and Smoked Gouda .
Before them, most of the burger joints added egg / bread crumbs / other meat into their beef patty. However, they went against the current and served premium 100% aged beef patty at an affordable pricing. Because they aged the beef themselves, they were able to lower the food cost by a large margin. .
Back to the burger. Soft pulled pork shoulder with med cooked patty. The main source of seasoning was from the cheese and bacon which were just enough to season the burger. They knew that the bun won't be able to soak in all the juice, so that only put a thinner piece below and leaving the top part dry for texture. Every single step was calculated and carefully designed. .
The chips were good too. Fluffy in the inside and crispy on the outside. Best with burger.
