麻辣香锅 (Mala Xiang Guo) is a medley of pick-your-own ingredients which are then stir fried and tossed in Sichuan chilli peppercorns and oil. The result is a spicy-numb (depending on the strength of spiciness picked), irresistibly aromatic bowl with a range of ingredients that provide textures from crunchy contrasted with soft all in one. Ours included luncheon meat, chicken, beef and bean sprouts. Best of all was getting instant noodles into the mix. It's like mee goreng, but springier and slurp-licious.
