@theheadlessbaker is a hawker baker that first started at Ghim Moh FC but has now expanded to include a cafe at The Star Vista. The former has a range of tea goods from financiers to scones whereas the cafe has more savoury offerings such as croissants and kouign amann.

Do not come expecting hawker centre prices though as most of their baked goodsstart from $4 to $5 though relatively affordable by hipster bakery standards.

I was a little too greedy for my own good and ordered a medley of tea cakes --- lemon pistachio, earl grey lavender and banana cakes, matcha financier, and cinnamon rolls.

The cakes were all fluffy, light, moist and buttery. My personal favourite is the earl grey lavender. I like that the aromatics and flavours of both earl grey and lavender were distinctively present. The cakes in general were a little sweet for my liking.

I also liked their cinnamon roll --- the dough was soft and chewy. The sweetened cinnamon filling was done just right.

I am not one of those who have a sweet tooth (though I make an exception for bubble tea) but this is one bakery I don't mind returning for!

Chanced upon The Headless Baker when I realised they were opening an outlet at Star Vista, but did you know that their original store was just about a 15 mins walk away?

Located within Ghim Moh Hawker Centre, THB sits amidst hawker stores and stands out with their beautifully assorted and arranged tea cakes in the display.

As we reached a lil' late (almost closing time), we managed to snag up their Earl Grey Lavender ($3) and Pandan x Gula ($2) teacakes!

Each teacake is dressed with a drizzle of flavoured icing on top which isn't too sweet and goes well with the tea cake sponge.

For the former, as you bite into it, a hint of lavender perfumes your mouth & nose while you taste the earl grey. With lavender bits topping the icing, the light scent prepares you for the enjoyable bite.

As for the latter, it may sound sweet when you read the name of it, but the well-balanced tea cake feels like having chendol (without the milk & ice) in a warm toasty bite, which is rather heart-warming.

Both tea cakes also got the approval of the in-laws for being not too sweet & rather enjoyable.

bake box from @theheadlessbaker this week! πŸ₯° I ordered via @pickupp.sg and it was so ridiculously affordable - $15 for this box excl delivery! this was truly a wallet friendly treat.

onto the bakes, I enjoyed the 𝐌𝐚𝐭𝐜𝐑𝐚 𝐚𝐧𝐝 π‡π¨π£π’πœπ‘πš π…π’π§πšπ§πœπ’πžπ«π¬ tremendously! they were incredibly buttery and the taste was brought out really well. another one of my favourites was the π„πšπ«π₯ π†π«πžπ² π‹πšπ―πžπ§ππžπ« π“πžπšπœπšπ€πž which was incredibly moist and fluffy.

Verdict: 9/10! I saw that they have a physical shop and I’m definitely gonna go down to get some bakes in the future πŸ₯°

Not cheap for hawker prices but definitely cafe standards .

The berry muffin , banana cakes and lemon cakes are the best .

Soft, moist and strong extracted flavours from the pandan was well balanced with the icing.
