At Rabbit Stash, the interplay between art and cuisine is one of the guiding philosophies behind its menu which strives to tantalize both eyes and taste buds through ‘gastronomic art’. Marrying both classic French and traditional techniques, Rabbit Stash is committed to presenting modern Singapore dishes with a distinct French flair through various ingredients and out-of-the-box plating styles that can intimately engage the senses. Inspired by his travel experiences and interactions with various people, Chef Matthew’s seasonal degustation offerings are expressed through a characteristic principle simply summed up as “ENSOPHI™” — Exotic, Nostalgia, Soil, Ocean, Piquancy, Heritage and Impression. Each element represents a certain dish in the degustation course which gradually traces the culinary footprint of his journeys. Complementing the seasonal menu is a wine list sourced from boutique vineyards all over the world ranging from familiar regions such as Bordeaux, France all the way to little-known ones such as Nahe, Germany and Colchagua Valley, Chile. The restaurant has been listed for the following in the top five category for 2013 and 2014: World Gourmet Summit for New Restaurant, Chef of the Year as well as in Wine & Dine Singapore’s Top Restaurant guide.

Judging from the dramatic food styling by head chef Matthew Mok, it seems that Rabbit Stash’s mantra is “go big or go home”. Chef-owner Matthew injects his personal touches and showcases his artistic flairs through his dishes, transforming them into exquisite plates of artwork sure to impress a date. Located at the top floor of Wangz Hotel in Tiong Bahru, Rabbit Stash offers panoramic views of the surroundings. Order their signature cocktail Coconuts ($23) to sip on as you take in the views. Made with fresh coconut, homemade hazelnut syrup and dark rum, it's a refreshing drink to start the night with before adjourning to your alfresco seats. Coined by chef Matthew, ENSOPHI™ ($148) — short for Exotic, Nostalgia, Soil, Ocean, Piquancy, Heritage and Impression — is a seven-course degustation menu of Asian-centric dishes made with classic French techniques. The menu changes seasonally, but dishes are often a creative combination of ingredients — think roast kangaroo meat paired with butternut squash and dark chocolate. His desserts are also elaborate and luscious — imagine a Ferrero Rocher-esque hazelnut sphere dusted with gold served only to be “destroyed” by a drizzle of warm chocolate that reveals pop rocks and a nougat core. Now that is one visual and gastronomical feast!

Despite its moniker, the slab of lusciously tender meat right there sitting atop the bed of barley porridge is undeniably char siew of the most luxurious grade. 4.5/5

Essentially a high-concept and delectable art installation. The avocado was remarkably smooth and creamy, with a texture comparable to that of lotus paste in paus. Elsewhere, the scallop was admirably cooked, the mussel and chorizo were slightly spicy and the sea lettuce masterfully evoked the aquatic atmosphere of fish tank inside your mouth. 4/5

The kangaroo meat had a most exotic (errr, as the name already implies…? – Editor) taste, like a fantastic ménage à trois of pork, duck and fish meat all rolled into one gamey, roasty package. The butternut squash and dark chocolate were on hand for the uninitiated who may need help navigating the palate-exhilarating path of joey discovery. 4/5

Saturn is a compelling combination of pop rocks and Ferrero Rocher-esque hazelnut indulgence, whilst the honey stars, mango sun and other chocolate planet obediently fulfil their window dressing roles in this stunning visual spectacle, complete with the arresting drama of Saturn being tragically destroyed. Well done. 4.5/5
