Right before dessert, the star dish which was the Mysore Spiced Rack of Lamb arrived at the table. Cooked to perfection, the meat was so tender and not gamey at all - love the pinkish hue. The spices coated on the lamb were so good but the trio of sauces elevated the whole experience. The slightly herbaceous, smooth coriander chutney (Thogayal?), the fragrant curry-like sauce (salsa?) and the tangy-hot goan sauce just got my taste buds tingling. Together we were also served their homemade raita (which countered a bit of the richness and heat) and a side of Lamb Biryani which was chock full of ingredients. So satisfying and decadent.

Next up, the first appetiser was a plump Aomori Scallop in a pool of Lemongrass Sothi that was made with turmeric and coconut milk. A kinda Japanese Indian fusion dish with the combination of flavours. And followed closely behind was a heavily seasoned Chettinad Chicken Roti. The succulent, hearty filling paired nicely with soft dough - at this point, I was ready to enter a food comatose but I pushed on. Going into the mains, the Amadai was a competent dish with the lip-smacking Madurai Pepper Crab Rasam. The oh-so-crunchy, crispy, firm-flakey protein matched wonderfully with the comforting peppery crustacean-enriched broth.

Practically rolling out of Thevar with my dress almost bursting at the seams; I was really impressed with the satisfying multi-course menu ($288++). My wallet might be crying but my tummy was singing happy tunes. Said to be rooted in Indian traditions and crafted with European techniques, the lineup was pretty stellar and each dish held a beautiful punch. Starting strong, the snacks were to die for, in my opinion. The Strawberry Chaat, in particular, being the unanimous favourite at the table. The thin tart crust was so delicate and the rush of flavours from the juicy berry bits and spices really delivered a balanced yet fun surprise - fresh, sweet and savoury. The tender Iberico crispy pork wrapped in betel leaf was a flavour bomb too with the sambal aioli. The marble-like Beetroot Pani Puri was a delightful number as well and served as a tangy palate cleanser of sorts with the bright pop from the buttermilk and pomegranate.

@thevar.sg multi-course menu ($288+) by chef @mano.thevar started off with a mind-blowing Strawberry Chaat, which achieves a perfect balance of sweet, savoury and spicy ✨ with beautiful strawberry toppings in a thin chocolate tart shell ✨ the bite just cracks and melts in your mouth 👄 it comes together with a simple betel leaf with crispy pork sambal wrapped inside 🍃 and the inside blue prawn casa chilli toast - both were nicely executed but the highlight was definitely the strawberry chaat that deserves the price 🍓

but personally, i will prefer lesser courses - at a lower price as it is too filling. will check them out again if there is a more affordable smaller menu.

The play on textures and flavours in the dish was so good. The chicken was sooo well marinated and well cooked. Meat was super tender and umami.

Starters consisted if Otoro Soba Uttapam, Crispy Pork Sambal in Betel Leave & Pani Puri and honestly, it was the best part of my meal. All of them had subtle indian spices infused and were amazing.
