This mod-Indian place was pretty good in general. One of the great dishes was this fried pork in a unique way wrapped in Betel leaf. Quite an interesting twist, using Indian flavours. Definitely worth a try!

Crispy Pork ($14)

The keto diet-esque crispy pork @thevar.sg makes dieting seem like a breeze (or not). Served with a hearty dose of sambal aioli and jalapeno pickles, the slowcooked then deepfried slab of meat is then wrapped in a betel leaf ready to be eaten whole. The bite is juicy with slightly crisps textures at the edges and the betel leaf did an amazing job cutting away any ounce of greasiness from the meat.

Pacific Oyster ($6/pc)

The oysters @thevar.sg ain’t no ordinary freshly shucked oysters. Each oyster was topped with a rasam granita, rasam being a South Indian soup dish. The combination is an explosion of flavour as the brine from the oyster is complemented by the sour and spicy taste of the rasam. My only regret was not ordering half a dozen at one go.

Tired of dressing your oysters with the usual insipid vinaigrette ? Thevar serves these deceptively plump and juicy ones, uniquely flavored with South Indian spices. An explosion of flavors and textures in your mouth. A very strong start to our meal but the rest of the dishes held their own. I especially loved the decadent chix roti and the textured berry pulao. Iberico was done well, but flavours not as balanced (too one-dimensionally sweet for me).

We had devised a little strategy to have part one of our dinner at Thevar and half elsewhere. Thus, Burppler Jayne and I only ordered nearly all of the items in the first section of the menu. But before we knew it, Chef Mano slid over with a plate of his other new dish, the Baby Potato Chaat with Tamarind and Yogurt Dressing to let us have a try.
Having traveled to India more then once, Jayne is very familiar with the food there. And she said eating this transported her back in an instant as the flavours were exactly what she missed about the street food there. I may not have been to India myself but the blend of acidity, fragrant spices and crunch, rallied together by the soft skin-still-on potatoes was unmistakably delicious.
Definitely get this to share so you can try more dishes here.

Intense is an apt word to describe this. A giant grilled river prawn is topped off with this floss and a hae bi kinda XO sauce which just screams flavour! The best part is when you mix it all up with that oh-so-creamy prawn butter from the head and slather it on the crispy roti. Sheer bliss (though bliss doesn’t come cheap). 😂
