Was scrolling through social media and found out about the new ThirtyAte; situated at 38 Sultan Gate, ThirtyAte has taken over the former premises of the now-defunct hipster food court FOMO Singapore, which has also been left vacant for quite a long while. Having opened its doors fairly recently, there seems to be quite a lot of work being done to the space since the days that it was being last occupied — the entire space has been massively revamped with the layout being changed; the interior of the shophouse now looks more like a proper bistro with the closed kitchen being placed at the very end, while the bar counter is where the drinks preparation area is with shelves displaying the various types of alcohol and mixers that they use, and is fully fitted with an espresso machine as well. The entire space is decked in a shade of teal; the dine-in area being segmented into different sections of just a few tables each so as to provide diners with a more private and intimate dining experience. Filled with dining tables that sport a marble-esque table top and dining chairs with a wooden and rattan accent — gave a sort of rustic, colonial sort of look and feel to the restaurant; there is also an outdoors area that is accessible from the main dining hall as well. Being an establishment that attempts to bring their patrons a modern gastronomical experience that involves European-Asian fusion fare, the menu comprises of sections dedicated to starters, bites, pasta, mains, sharing platters and dessert; there is also a kids menu which involves Mini Fish & Chips, Spaghetti Pomodoro, and Spaghetti Carbonara. Choices of beverages include coffee (including special concoctions like the Iced Gula Melaka Doppio), non-coffee (i.e. chocolate, Matcha / Houjicha Latte), Bubbly (i.e. mocktails and canned drinks), as well as tea and cold-pressed juice options. They also provide a good variety of spirits, wines and beers, as well as Mixes such as the Whiskey Highball and Gin Tonic.

Having skimmed through the menu here prior to our visit, the Chicken Corden Bleu lovers in us definitely had set our eyes on the Roulade of Chicken Corden Bleu that is listed on the “Mains” section of the menu. We noticed from how they had plated the Roulade of Chicken Corden Bleu that the dish features a deep-fried rolled chicken breast which is stuffed with that melty, oozy cheese within, while the same chicken breast is topped off with prosciutto chips over the top (the same prosciutto chips are used in their rendition of the carbonara which they name Carbonara, Prosciutto Chips, and Egg) — a rather inventive approach considering how the classic rendition of the dish usually features a deep-fried chicken breast that has been rolled with ham and cheese within. The Roulade of Chicken Corden Bleu here also comes with some vegetables on the side, and what seems to be a heavy drizzle of bechamel sauce; there is also a rather small bed of mash potatoes sitting beneath as well. First taste of the Roulade of Chicken Corden Bleu was how we found the deep-fried chicken itself lacking the crisp as one would have expected in the usual rendition — the batter seemed to have absorbed quite a fair bit of the bechamel sauce; the exterior being slightly less crisp than what we would have liked as a result. That being said, we really liked how the chicken breast was tender and sufficiently moist (perhaps also due to the drizzling of the bechamel sauce); the inside revealing oozy, melted cheese that is stringy and somewhat provides yet another savoury contrast especially to the bechamel sauce which already carries a creamy note and texture. The addition of prosciutto chips as a replacement for the ham was one that was an interesting move; the chips carried a savouriness that was more intense than the usual prosciutto ham — heavier on those notes that one would associate with cured meat, but it is barely heavy considering how these were chips that were light and crisp. One could easily argue how the replacement of ham as prosciutto chips takes away quite a fair bit of the meatiness of the dish, though it could also be seen as an attempt to keep things light here for a dish that is usually quite heavy to the palate. The bed of mash underneath came reasonably smooth; liked how they weren’t too excessive with the amount of mash — just enough as a side without making the dish feeling excessively heavy given what it is, though it is drenched with all that bechamel sauce and melted cheese from the roulade for the most part. There are also some roasted root vegetables provided on the side; a great respite to crunch on them when all gets too heavy with the cheese, meat and sauce here.

Thought that the food at ThirtyAte attempts to be a little different; that being said, we did feel like we were expecting a little more creativity for their dishes. For the most part, we did feel that their concept of European-Asian fusion was not particularly evident especially In the “Mains” section of the menu, which most of the dishes we ordered also belong to — they seem to be generally more European with the Asian fusion elements existing only in just some of the items on their menu. Amongst the items which we have tried, whilst the Seared Salmon & Cured Tomatoes just felt a little basic being a dish that featured balsamic-cured cherry tomato and crisp skin salmon, the Roulade of Chicken Corden Bleu had a plating that wasn’t too aesthetically pleasing with the onslaught of sauces that got to most of the other elements on the same plate — perhaps they can look into redesigning the plating of the latter and include the sauce at the side of the same plate rather than over the entire item instead to improve on the presentation of the dish which also further allows the patron to pair as much sauce as they wish without the sauce being all over different elements. No doubt that the food at ThirtyAte wasn’t nasty; there definitely is some room for improvement to further refine their offerings in terms of presentation and composition to better suit its overall theme and direction — we do feel that there is a lot of potential with this one if they are able to fine tune on what they have to offer. That being said, ThirtyAte is a spot that is an interesting dining option in the area; the environment certainly being one that is suitable for more intimate catch-ups and dates as well.
