There has been quite some talk about the opening of Tutto on social media ever since the establishment had opened its doors officially some time back — these folks are located at the second level of Jewel Changi Airport and has taken over the space that is situated next to TONITO Latin American Kitchen. Tutto is a concept by the Da Paolo Group that is most notable for their Da Paolo Pizza Bar, Da Paolo Pasta Bar and Da Paolo Gastronomia concepts — the menu at Tutto comprises of sections that is dedicated to their Antipasti, Pasta, Pizza and Dessert; it does seem that there would also be an introduction of a line-up of gelato that would be added to the menu in due time.
The Assassina is definitely one of the more interesting and also unique offerings at Tutto that pretty much defined a different experience for us about what we thought we knew about pastas. This was a dish that was described in the menu to have come with elements such as “burnt” spaghetti with tomato and chilli, and hails from a city named Bari in Italy — there is also a minimum waiting time of 20mins for the dish as well. One thing that is noted at Tutto is how the pasta is being made fresh in-house daily on-site. Given how the spaghetti is “burnt” here, it does seem that the pasta is being pan-fried here to the point where the texture of the noodles does carry a bit of a crunch in some parts, though it still largely carries a bit of a bite just like the typical al-dente pasta out there — something rather similar to the concept of the charred rice in our local version of claypot rice. The mix of chili and tomato used in the sauce base does come with a vibe similar to Lao Gan Ma-esque chili; one that comes with a moderate kick of spiciness, yet coming with a bit of a zesty tang from the addition of tomatoes.
