It comes with a molten creamy centre and a caramelised flavoured crust. In a way or another, there is no need to fly all the way to Spain to know why the cheesecake is so famous.

Sitting atop the toasted bread is the picquillo cream, pickled anchovies and sauteed green and red bell pepper. The sweetness of the picquillo (a typical Spanish red pepper) is enhanced by the acidity of the tangy anchovies.

Feature Black Rabas “A Fuego Negro”. My favourite dish at @txa.pintxobar , the traditional dish that presented in a contemporary style , crispy squid ink donuts are made from combinations of sautéed bell peppers, onions, carrots, fresh squid ink and diced squid.
It’s crunchy outside but melt in the mouth.

This is called the Crema de Roquefort Con Manzana Y Nueces, one of the many pinchos on the menu at @TXA.PintxoBar. It uses a type of blue cheese from Southern France, Roquefort cheese, which is made into white cream here. The blue cheese flavour is not that pungent, and is well-balanced by the apple jam and walnuts.

Confit tomato, tuna, anchovies, piparra - Confit tomato: fresh tomatoes are boiled and peeled, then confit in olive oil, garlic and thyme. Each Pintxo Igeldo has half a tomato. - The tuna used in this pintxo is sourced from Basque Country. - The peppers used are piparras, preserved in vinegar.
