Happy Thursday and we can’t wait for our long awaited dinner tonight!

Among all the dishes from Uni Gallery’s latest 6-course Multiple Foodgasm Kaiseki, the Tempura Truffle Chawanmushi ($20/ ala carte) stole the show for me. Seemingly simple on paper, the dish was heavenly and certainly an item I can see myself going back for again and again. Warm, silky yet complex in flavor, you get the lightness of the dashi which sets the base of the steamed egg custard then layer that with the earthy aroma of the shaved winter truffle. And to push it over the top, the crisp tempura had the richness of uni and the grassy note of the shiso leave wrapped within.

Offered a crash course into the different variant of sea urchins they carry; I was blown away by Uni Gallery’s latest Multiple Foodgasm Kaiseki. Available in 6-course ($118++) and 8-course ($188++), the uni-centric restaurant source their seafood from all over the world. Hence, even with the 6-course menu that I got to try; you are sure to get your money’s worth with the lavish spread.

To start, we had the Le Tetsuya ($38/ ala carte), a martini glass filled with Australian Sea Urchin, topped with exquisite Siberian caviar and at the very bottom a slurpy amaebi dripped in white miso sauce. The uni itself was fairly creamy and paired well with the sweet-salty crushed shrimp. One for the oyster lovers, the Uni Oyster Shot was the real deal. Freshly shucked oyster with briny salmon roe and similarly coupled with short-spine Australian uni.

Next up, to truly sample a taste of the sea, the Seasonal Sashimi presented fatty Otoro, delicate Botan Ebi, fresh Kinmedai, firm Hotate, crunchy Sea Grapes and luscious Japanese Shiro Uni in a lovely platter. All utterly sweet and clean tasting, the ingredients were exceptional. However, what really stole the show was the Tempura Truffle Chawanmushi ($20/ ala carte).

For added indulgence, the Caviar Bone Marrow featured premium Oscietra Caviar on Grilled Bone Marrow sprinkled with beef bits. A textural experience to say the least, it was a tad jelat for me. Lastly the Toro Squid Ink Sushi ($22/ per pc ala carte) was a literal mouthful with the small mound of ikura though the flavours kind of overpowered one another.

Thanks Burpple for the invite and Uni Gallery for the warm hospitality!

If you love uni, and everything foodgasmic, then Uni Gallery's latest 6 course or 8 course menu would give you much better value compared to if you were to order each dishes separately. The price of every dish in the 6 course menu adds up to around $180++.
🔸
In my 6 course menu, I had:
1. Le Tetsuya ($38) - with uni on a bed of amaebi with white miso sauce, topped with Siberian caviar;
2. Uni Oyster Shot ($24) - uni with ikura on freshly shucked oyster;
3. Five types of Sashimi ($30, est) - we had otoro, botan ebi, kinmedai, hotate and uni;
4. Tempura Truffle Chawanmushi ($20) - uni tempura with shaved winter truffle on chawanmushi;
5. Caviar Bone Marrow ($32) - oscietra caviar on grilled bone marrow with grilled beef bits;
6. Toro Squid Ink Sushi ($44 for two pieces) - uni, ikura, otoro on squid ink sushi.
🔸
Considering the ingredients included in each of the 6 courses, the menu is affordable, although most of the uni served were Australian uni. There's also an 8 course option available at $188++.

[Tasting]

Known as the Ambrosia of Uni in Singapore.
Located at the basement of "The Plaza" which is just beside Pan Pacific Suite Singapore, can be challenging to find it's location for 1st timer.

Restaurant serves a wide selection of fresh raw Uni, from the Canadian Aka Uni which is one of the world largest Uni, to the Japanese Bafun Uni that have a natural sweet taste and the beautiful Russian Bafan Uni that look like a flower.

Going for the Uni Sampler Set of 5types at $98 is recommended for those trying out Uni for the 1st time.

Restaurant also serves a wide selection of sashimi, steak and fried food for those who would like to have other varieties.

Uni Dry Sake shot would be my recommendation for those daredevil that would like to challenge themself, strong sake combine with sweet mouth watering Bufun Ubi, makes a perfect combination to get you drunk without you realizing.

Restaurant is rather small with only 2 waiters, waiting time is rather long and order can be miss out. Check constantly remind the waiter of your missing order and also be mindful to check your bill.

Sidenote: Do call in for reservations even on a weekday to avoid disappointment. Also do check if on their Uni selection of the day as they run out of those top grade Uni airflow from overseas.

Recommended dishes:
1) Uni Dry Sake Shot
2) Uni with Sturgeon Caviar & Crab meat
3) Uni Sampler Set

Verdict:

Given the rich texture of the foie gras, the firmness of the Australian Uni works to its advantage in this dish. The combination of these three ingredients might come across quite assertive but the red wine sauce, which draped so subtly over them, lent a sharp, tart sweetness bringing the components together in harmony. .
