The stars were the variety of 𝐛𝐚𝐫 𝐝𝐫𝐢𝐧𝐤𝐬 with classic cocktails at $18, signature at $22, and bespoke (customised) at $24. For classic, we enjoyed our choices of fruity raspberry gin (Clover Club) and whisky sour. Was also introduced to their tea-based signature series. Enjoyed the refreshing tea-gin concoctions where both balanced each other well. They also offer mocktails at $12 made from fresh produce and in house syrups.

Were the rice noodles flabby or al la dente? Were the bean sprouts and greens firm and crisp or limp and flaccid. Would the beef be hard or soft and chewy? How was the balance of soy sauce, oil, and garlic in making the dish flavoursome but not steeped in oil?
And importantly, how successfully did the chef mystically infuse Wok Hei into the dish?

Speaking of Wok Hei, one of the most surprising spots I found this was in a prawn triple-szechwan fried rice at a dhaba near Ellora Caves in Aurangabad. But that was another time and makes for another story... #thali #northindianfood

The current sustainability drive is pushing us into uncharted areas, e.g. new boundaries of mock meats (Beyond, Impossible). But for basics like Roti Kapda aur Makaan, I would hazard that the simple elegance of a thali meal show us that there is a much more straightforward way to exercising frugality in a practical way. The modular design of a thali allows us to swop out what's not needed, and the brimming but tiny stainless steel thimbles set the tone for 'waste not, want not'. without the plate looking sad and empty. That's a great start for dieting by reducing your plate size!
