Even from amongst the really good breads that Singapore’s restaurant dining scene is blessed with at the moment (some of the finest examples are @cloudstreet.sg’s molasses-glazed licorice and stout rye, Curate’s brioche and @lesamisrestaurant’s entire bread-heaven-on-wheels), all the breads by @whitegrass.sg’s Executive Chef Takuya rose above my expectations. I reckon he must be a wizard of sorts to be able to coax flour, yeast and water to produce such astonishingly delicious results. I am sure anyone who has tasted his creations, will know what I mean when I say I can make an entire meal of his breads alone.

Surely, we look forward to their new menu as we expected better. Whitegrass reopened under Japanese head chef Takuya Yamashita, 32, formerly from Tokyo's one-Michelin-starred Ciel et Sol.

There were two things I was most impressed with during my dinner at Whitegrass - first was the bread, second was this dessert.

You have creamy and smooth sake kasu (lees from sake production) ice cream on a bed of passionfruit and mango puree. The bitterness in the dessert together with the strong taste of mango reminds me of the familiar taste of mango pomelo. That's comfort food, elevated.

Been 1+ year since my last visit. The same as the last time, there was nothing much to complain about any dishes as they were all very exquisitely prepared.

The conclusion seems to be consistent good food but nothing particularly outstanding.

Still a great place to dine with a great ambience.

To say the plating here is visually captivating is an understatement.
The second of our 5-course meal, and the most Oriental in terms of taste profile in my opinion, arrived on a plate that looked like a pair of hands was carefully cradling the duck (don’t you just love a clever trompe-l’œil?). Perfectly apt seeing how delectable the braised French Challans duck revealed itself to be.
With the stringiness all but gone, the flesh was silky-smooth and soft, caressing my mouth almost, along with the voluptuous eggplant cream. Crunchy water chestnut, springy jelly mushrooms and slippery kanten noodles were the refreshing accents to each bite, multiplying the facets of texture and flavour exponentially in this slightly sweet dish.
