I ordered their Signature Wonton Noodle, the thin Qiu Qiu noodle toasted in homemade savoury sauce,served with deep-fried and boiled wanton, Thai fish sausage, pork collar, egg and pork lard.
Another highlight is the pork collar, can taste the lemongrass on it and the Thai sausage sliced thin n cripsy.
Definitely will come back for this bowl.

Thai-style Wanton Noodles was quite a trend some time back — still remembered the time when Soi 19 Thai Wanton Mee first brought the dish to the masses back then, and thereafter came the wave of stalls serving up the same thing that started sprout up all across the island, which includes names such as KinMoo, now-defunct Baan by Rochor Thai and Fatty Thai Wanton Mee — just to name a few.

While one may have thought that the trend with Thai Wanton Noodles may have fizzled out with only a few of the stalls serving the dish still around to-date, Wonton Mama is a fairly new stall that had moved in to Badaling Coffeeshop at 455 Sengkang Avenue East. Apart from Thai-style Wanton Noodles, the stall also serves up items such as Seafood Tom Yum Soup with Rice or Noodles, as well as Grilled Pork Collar Rice.

There are two variants of Thai-style Wanton Noodles that Wonton Mama serves up — one being the Signature Thai Wonton Noodle, and the Classic Thai Wonton Noodle; the former being an upsized variant of the latter which also comes with Shoyu Soft-Yolk Egg, Fried Wanton and Fish Sausage. Served with egg noodles, the egg noodles come tossed in a savoury gravy with a slight dash of sweetness that comes with a load of fried garlic — the springy noodles carrying an umami note whilst also coming with a garlicky note; adding the dry chili flakes will further enhance the flavours of the dish with the added kick of spiciness that would tickle the tastebud. Here, the Char Siew feels a tad generic; the lean sort with a more dull aesthetic — personally nothing much to shout about, but it also came with crispy chunks of fried pork lard, while the wantons were filled with sufficient meat. The fried wontons were crisp, while the soup wontons were silky smooth; both well-sized for a mouthful. As someone who loves the Thai fish sausages, the fish sausage here was nothing short of delightful — gives a soft chew, and was really umami. The Shoyu soft-yolk egg was also something that impressed; essentially being a ramen egg, the egg yolk comes cured and thus savoury — the texture being aptly molten, comparable to that which are served at ramen joints.

While it’s a little difficult to justify making the trip specially down for Wonton Mama given the odd location of the coffeeshop that it is situated in that seemingly suggests that it is meant more for the convenience for the residents around the neighbourhood (it’s located a short distance away by bus from Greenwich V, and around the outskirts of Sengkang), Wonton Mama does serve up some fairly good Thai-style Wanton Noodles that are worth considering to have whilst in the area.
