This is aptly coined as the Kaleidoscope of Prosperity from @YanCantoneseCuisine CNY Menu. You get crispy vermicelli here with shreds of sweet potato (‘fan shu’), which sounds like a Chinese pun for the year of Rat (‘shu’). That aside, there are also elements of gold flakes, ‘you tiao’ and yellowtail fish.

The robust broth is made from chicken stock, lobster and prawn shells. Then steamed rice and seafood are added, allowing the rice grains to absorbed the flavours. Before serving, deep-fried crispy purple rice is added for that extra textural enjoyment.
