Exemplary

Once in a while these ridiculously priced things deliver and I am happy. Tea tree mushrooms, ridiculously tender Duroc pork belly that's perfectly fatty, crispy claypot rice that's better than most hawkers(it's not burnt at all), fried kale, sichuan spices and onsen egg.

Blast after blast of incredible umami and texture. One of the best things I've eaten

The wait time is more than 20mins so call ahead to let them prepare in advance

The beehoon is unique, but not particularly good. Same for the sauce.

Pork is very tender and quite fatty. Cilantro chimichurri is unique too. And the soup is a mix between herbal and peppery

This is the only Crystal Jade with a Michelin star, and it’s a notch above the crystal jade stainless steel palace takashimaya, both in terms of food quality and ambiance. Avoid the Peking Duck though, it is mediocre compared to Imperial Treasure on the same floor of Paragon. Service is attentive, but incredibly slow and with mistakes.

Ask them to not debone, you get more meat

Meat was tender, surprisingly. What's impressive are the sauces. The duck sauce was extremely intense from oyster sauce and sweet too. Plum sauce was good too

The duck skin itself is really the best I've had. It's crispy and flavourful

However the pancakes ABSOLUTELY RUIN them. They were tough, almost as if they weren't entirely cooked thru

True to the presentation, the taste is extremely unique. I guess the closest description is a vitamin drink, nothing like a fruit juice for example. But that doesn't do it any justice

Worth a try

It's a very restaurant style dish, meaning it's just ingredients with sauce ladled over and the flavours of the sauce don't infused into the beancurd and wtv at all

Very few rice grains in the soup, it's really more a soup than anything. Superior broth is good but there isn't really crab flavour

I was expecting something like a crab porridge so I was disappointed but that's on me, because they did serve exactly what the name suggests

This was delicious. Super tender, perfect medium rare texture. The inherent flavour was strong too, there's this fragrance from marination which doesn't detract from the natural flavours of the lamb

There's a bit of stickiness in the soup from the trotters, and there's thickness innthe broth from barley. Umami from cordyceps, and sweetness from a boatload of corn

Trotters were quite tender. Soup was incredibly addictive, I finished the entire pot myself
