From 1 April to 31 July 2019, there’s a wonderful reason to head to one of our favourite Chinese restaurants (not like we needed another excuse) — clam season is back at PUTIEN!

Cultivating these jewels of Putian City is no easy feat. It is a six-month-long process that requires clam farmers to wade out into knee-deep stretches of mud. These DUOTOU clams are extra plump and boast sweet flesh, a result of the mineral-saturated mud. This clam season, PUTIEN adds two flavours to their collection — Thai-Flavoured DUOTOU Clam and Stir-fried Sambal Chives with DUOTOU Clam. To sweeten the deal, you can enjoy any two clam dishes for just $39.80!

One of the two new flavours introduced this year is the Stir-fried Sambal Chives with DUOTOU Clam ($22.80). Clams are tossed in a tangy-sweet sambal sauce with chives and stir-fried for a lovely wok hei, zi-char style, making this an easy winner in our book. The other newbie is the Thai-flavoured DUOTOU Clam ($21.80), where clams, shredded green mangoes, cucumber and pineapple chunks, thinly sliced red peppers and onions are tossed in a zesty, spicy homemade Thai sauce and garnished with crushed peanuts for a nice crunch. This makes for a refreshing and appetising start to the meal.

With eight clam dishes in total, it’s easy to find something to please everyone. Perhaps the kids would enjoy the Baked DUOTOU Clam on Hot Plate ($21.80) that they can deshell and dip into the salt layer for extra seasoning. While the adults opt for a dish for the flavourful Steamed DUOTOU Clam with Minced Garlic ($19.80) that is hard to resist. These arrive beautifully fanned out, topped generously with minced garlic and chopped spring onions—totally addictive. Wash these garlicky clams down and cleanse the palette with the vinegary PUTIEN Bian Rou Soup, a superb dish we never pass up on.

Every table at PUTIEN should have an order of the crowd-favourite Lor Mee. The thick, creamy broth with silky smooth noodles punctuated by their tangy housemade chilli sauce just happens to be the perfect base to enjoy the DUOTOU Clam Omelette ($22.80). This elevated hawker favourite is served buttery and warm, studded generously with succulent clams and is a no-brainer to order during clam season. To enjoy the clean, distinct flavour of clams, dive into a porcelain bowl of Steamed DUOTOU Clam with Wine ($22.80). The heady flavours of ‘hua diao jiu’ create the perfect harmony with the briny, fresh clams. Otherwise, indulge in the familiar flavours in the Stir-fried DUOTOU Clam with Ginger & Spring Onion ($21.80), or the addictively crispy Salted Spicy DUOTOU Clam ($22.80) that packs a peppery punch!
