Hybrid Duck Broth Ramen with Flavoured Egg (Rich Soup) ($16.90++) After a dramatically overextended, uninspired, illogical, gin-fuelled hiatus in writing any reviews over the last few weeks, @thintbites is seemingly back with an even greater gap in his writing than ever before, courtesy of procrastination and a forgettable sense of the word. It has been a long time coming but I suppose with the flow of things being ceaselessly inconsistent alongside the pretentiousness in my gourmet literature rising to an all time high, writing at a doable pace would be the most appropriate option in my personal opinion and decision. - With that being said, let’s kick start this bad boy again with the one thing that I hold closest to my heart, that may very well ironically and eventually clog it up if I were to consume too much of it. We’re talking about ramen, and its myriad of possibilities and flavours shaped from decades of culinary endeavours. The place in mind is a very special place, being my favourite ramen shop in the entire world. Ginza Kamo Soba Kyudaime Keisuke is a humble little abode nestled in the heart of the village of beer towers and happy hours that is Holland Village. We’re talking about Keisuke Takeda here, who in my opinion is the most legendary ramen chef in the history of modern ramen culture. His ramen empire in Singapore is a majesty to behold with a total of 19 outlets worldwide, of which 14 of them are in Singapore. - With numerous specialty ramen shops incorporating fresh new takes on the infinite joy and abundance of ramen, Ginza Kamo Soba Kyudaime Keisuke is just one of the geniuses of Keisuke Takeda, and stands to be my favourite ramen combining two of my favourite things: Ramen and Duck. Their Hybrid Duck Broth Ramen with Flavoured Egg in Rich Soup ($16.90++) is the crème de la crème in the world of ramen. This beauty features a robust, warm and sensational broth flavoured with duck bones and herbs, topped with two gorgeous slices of Irish hybrid duck with the perfect noodles to soak up every last drop of the quack. - From wonderful customer service to the alluring charm of the complimentary hard-boiled eggs and toppings galore, this is the one place to be for ramen and ramen.

Wasabi Duck Rice Small rice bowl to go with the ramen. Quite strong wasabi flavour but it blends well with the diced duck and green onion. Worth trying!

Clear Soup Duck Ramen The yuzu Chili and pepper seasoning went extremely well with the clear soup. Duck was tender, and the cook on the noodles was spot on.

Woodfired Bread For Breakfast What I love about Firebake is that their breads are uniquely made using a woodfire bread oven. Each of their breads will have a beautiful char to it which makes me personally enjoy Firebake for breakfast to enjoy an array of breads. Their Cheesymite ($3.50) is a must have for a savory, cheesy start to the day coupled with soft-boiled eggs & coffee!

Firebake Wagyu Cheese Burger $18 With the exception of their amazing bread, my experiences at Firebake have been pretty uneven. Thankfully this bad boy delivers on all fronts. The hefty Australian Wagyu patty is flavourful and succulent, boasting beautiful char and sear on the outside and smothered in a beefy tomato relish, a cascade of melty cheese and pickles between fluffy sourdough potato buns. Taste: 3.5/5

Prawn Capellini Aglio Olio ($22++). There are two things executed exceptionally well here at Firebake - first was the breads which they're famous for, and second was anything that comes out of their grill. 🔸 Case in point, these prawns grilled over charcoal fire exudes a smoky aroma, just like the grilled seabass in their seafood risotto ($26++) and their grilled Argentinian striploin ($28++). And if two large meaty prawns still isn't enough for you, you get full-on prawn flavours in the aglio olio as well. This is because of the generous sprinkling of sakura ebi, and that the aglio olio was tossed in prawn oil, besides garlic, kombu, and sweet mirin. 🔸 And here's an insider fact - do you know what's the current best seller at Firebake? It's this prawn capellini. Tie Guan Yin with Coffee Popcorn I’m not at all a coffee person, but this collaboration flavour between Tom’s and Parchmen & Co had a well handled balance! I liked how they retained the natural bitterness of the tie guan yin and didn’t overwhelm it with sweetness. The white chocolate and hand ground coffee beans coated popcorns gave a contrast texture and flavour. This anniversary flavour is available on 20th and 21st September, as part of Tom’s 14th Anniversary celebration - they’ll also be serving up other brand new flavours and returning fan favourites through the month. Vanilla with Oolong and Rose Jelly A special collaboration flavour with Gong Cha - vanilla made with Madagascar vanilla beans, topped with oolong tea sauce and konnyaku rose jelly! The scoop was fragrant with a good amount of sweetness. Was fun to have with the chewy bits of konnyaku too. This anniversary flavour is available on 13th and 14th September, as part of Tom’s 14th Anniversary celebration - they’ll also be serving up other brand new flavours and returning fan favourites through the month. Mao Shan Wang We were super lucky to get to try the very limited batch of Mao Shan Wang that the Tom’s Palette crew worked really hard in making!! It was freshly churned to lock in as much of the durians’ natural flavour, and that really shone through the final product. Absolutely loved the richness and its creamy texture!
