They will be launching a series of menu items in May, one of the new appetisers being the Balvenie Cured Salmon Salad which consist of air-flown Norwegian salmon cured in Balvenie 12 year old whisky, rested on a bed of mesclun and paired with English mustard soy dip.
One of the highlights is the Flambe Boston Lobster Thermidor, a 550g lobster and mushroom, onion flambe with brandy that is topped with melted cheese and gratineed till it emits a golden radiance.
The Fumee Bacon Blue Stilton Burger changes my impression of blue cheese, I have expected a sharp, intense flavour but it turned out to be smooth and pleasant instead. Of course having a wagyu patty alongside doesnt hurt.
