Notable pieces were:
🍣 Marinated maguro from Nagasaki with yuzu - a citrus burst before the fish melted into the rice
🍣 Tachiuo or silver belt fish - love the meaty yet clean texture
🍣 Botan ebi - sweet and luscious
🍣 Shima Aji - excellent rendition
🍣 Sakura masu or cherry trout - salty and savoury, reminiscent of smoked salmon - not our fav
🍣 Otoro - wagyu of fish that completely disintegrated; amazing 🤩
