The key to a good vegetarian beehoon for me is the fried beancurd skin. I like it fresh and super crispy. The old couple who used to run the stall downstairs make it themselves and I used to order an extra good measure.

The beehoon and ingredients at Shunfu Vegetarian was delicious but the fried beancurd skin seemed to be factory ordered. It was thin and soft. A little disappointing to be honest.
