The star of Heng Heng Bak Kut Teh is not its bak kut teh but actually its steamed fish.
One has to go early to select a fresh fish from the coffeeshop's freezer as there are limited quantities each day. We were lucky to have the sea bass and snapper fish heads ($26 ea). The fish meat was cooked perfectly as the meat held its integrity but could be easily stripped off the bone as huge chunks. The fermented bean sauce adds to the already flavorful fish.
The bak kut teh is nothing extraordinary, the meat can be quite tough.
