Because, this is not the typical very spicy 花椒 Pericarpium Zanthoxyli 四川麻辣 sze chuan pepper that numbs your lips but a milder Singapore version of spiciness that is acceptable to most Singaporeans. This spicy sauce blends very well with the white salted duck. The cucumber strips with the mala sauce is in an additional bowl as we all loved this spicy salad dish.
