It is broiled and grilled pig parts (face, ear and liver) then chopped into small pieces tossed with ginger, calamansi/vinegar, onion, pepper, chili pepper and last but not the least pig 🐷 BRAINs! Yes, pig brains for the authentic ilocano taste experience. Can you take it??? If not just tell them to use mayonnaise instead.
