Congrats to Mr and Mrs Soo for making it to the Michelin Bib Gourmand! Mr Soo was in high spirits when I was there. Beaming with joy, he told me, "你知道我的汤是怎么熬的吗?我早上用干贝,干蚝,虾米,和一点点椰浆,每天熬两个小时“ (he was telling me how he cook his gravy)

Their efforts resulted in light and fragrant stock that is not salty, not heavy, with pleasant sweetness from the scallops and light umami lift from the oysters. Every ingredient in that bowl was fresh, I can't take cockles usually but I could finish them cos it was fresh. Crayfish was small, but cooked just nicely so it was juicy and very tender.

Cheaper options available, from $3 onwards. The $3 option will be good enough because the magic is in the stock. The $7 option came with crayfish which is very small but very good, it's a bonus if you have the budget.
