Was going around Golden Mile Food Centre pretty recently and managed to chance upon a new stall that had sprouted up at the second level of the food centre. Thai Boat Noodles Waterfall is a fairly new addition to the food centre, taking up the former premises of the now-defunct Fei Zhu Traditional Teochew Handmade Fishball & Mushroom Minced Meat Noodle 肥猪传统潮州手工鱼圆香菇肉脞面 that has been operating for a while. Thai Boat Noodles Waterfall is a stall that is fairly difficult to miss; this is considering how the signage of the stall is pretty brightly-lit — the signage seeing a white background with red text and logo being quite an attention-grabbing sight considering the simplicity of it all. The menu of Thai Boat Noodles Waterfall circles around its boat noodles offerings — there are four (4) of them that are listed on the menu here, which includes standard Boat Noodles, the Tom Yam Boat Noodles, Pork Soup and the Boat Noodles (Dry). Those that are looking for a dish that can be shared around the table can go for the Boiled Pork with Dipping Sauce, which is the only sharing plate that is being offered here at Thai Boat Noodles Waterfall.

Our preference for dry noodles found us going for the Boat Noodles (Dry) — Thai Boat Noodles Waterfall allows patrons to opt for their preferred choice of noodles; options included the Thai White Noodle, Mee Kia, Mee Hoon and Instant Noodles. For our order, we went with the Thai White Noodle — the default choice for most when it comes to having a bowl of authentic Thai Boat Noodles. Thai Boat Noodles Waterfall does not describe the elements that comes with their dishes on the menu; that being said, one can observe from our order that the Boat Noodles (Dry) comes with pork balls, pork slices, pork liver, pork lard, beansprouts and some greens — the item is also paired with a bowl of soup on the side as well. Giving the noodles a bit of a toss before digging into the bowl, it would be wise not to leave the bowl of noodles out for too long before consuming them especially for those whom have opted for the Thai White Noodles for their order — this is because the Thai White Noodles tend to clump up really fast together and does affect the entire experience of the dish overall. The Thai White Noodles comes with a chewy and springy texture; can also be described as a thicker version of glass noodles as well if one may do just that. The pork balls are pretty much a crowd pleaser providing a dish with a meaty bite; the pork slices in the meanwhile being easy to chew without carrying any undesirable porky stench — the pork lard being fried till golden-brown and comes all crisp without having felt like it has too much greasiness being trapped within. The pork liver here is rather mushy, though it does go into the sauce base than the noodles are being tossed with fairly easily; we also noticed that the noodles does absorb the sauce base rather easily, with the noodles carrying a hint of spiciness that tickles the tastebuds.

Other elements like the beansprouts and the greens delivered a refreshing crunch helping to refresh the tastebuds. The highlight for us here was actually the bowl of soup that came on the side; the soup comes with a slightly herbal note whilst being savoury at the same time; there was also a garlicky note from somewhere that accompanied a lightly spicy kick — something that was pretty much roasty and umami, being a flavour bomb that hits the taste buds all around. Whilst we aren’t folks whom are particularly into soupy dishes, this was one bowl of soup that we had no problems polishing the entire bowl clean — and that is pretty much a feat of its own. Priced at $5.50, the Boat Noodles (Dry) might be an item that some would find a little small-sized for their appetites; that being said, it does seem like a fairly difficult balance to strike these days especially given the rise in business costs of the late. All of Thai Boat Noodles Waterfall’s dishes are priced between $5.50 to $6; a decent price point that does not hurt the wallet too much. Given how impressed we were with the soup, we would think that their Boat Noodles and Pork Soup are the to-go for items here for those whom absolutely love Thai Boat Noodles — these would also be items that we are going for if we would ever make a return visit. A name that one should probably keep their eyes on in the local F&B scene, it is also needless to say that Thai Boat Noodles Waterfall is one spot worth making the special trip out there for!
