Crispy potato hash with mushroom duxelle, poached eggs, shaved Gruyere, chlorophyll and truffle vinaigrette. Was surprised to see a thick hash here since I usually encounter thinner ones but I think it has ruined all potato hashes for me... Perfectly golden brown and crispy with a soft and creamy inside. The poached eggs on top were perfectly poached (and I really mean perfect) and the mushroom duxelle was earthy and rich. The egg yolk flowed over the hash and mushrooms and it was all a glorious mess. Super yum.
