Part of the 8 Course Lunch Omakase ($120 per pax) where the dishes change everytime depending what's in season.
This dish included fatty tuna, Hokkaido octopus and thinly sliced Leather Jacket with a little pinch of fish liver smeared between the folded sashimi. My favourite would be the fresh fatty tuna. Leather Jacket flesh is rather sweet when cooked, but as a sashimi it was more plain with the liver adding a hint of flavour which I drowned with wasabi and soy sauce.
