Everything is just perfect with this rendition – I tried it twice to confirm this, once on Friday and another this morning. The rice may look mushy from this angle but each grain remains whole, with bite, and reeks of the beautiful, almost herbaceous fragrance of the leaf. You get generous chunks of five spice + soy sauce-braised tender chicken and meaty shiitake. The sole chestnut in the mix is so soft, creamy and almost melts in the mouth, but the highlight is that golden globe of salted egg yolk which adds a lovely savoury note with every mouthful.
