Three of my most favourite things on one plate – perfectly grilled pork chop, bone-in, just so I can pick it up and munch on the fats/muscles on the bone; lots of sweet corn niblets, lightly buttered and salted; and that very potent, very intense red wine reduction.

Because I detest mesclun salad and powdered mash, so I'm more than happy to settle for just the corn niblets.

What a gorgeous hunk of tenderloin beautifully wrapped with bacon and cooked to medium rare, tonight's piece of meat was kinda perfect – the right doneness and rightfully juicy.
