If you have a group of family or friends who enjoy a sinfully good roasted suckling pig, you should consider the one at Wheeler's Estate. We pre-ordered ours to celebrate my mum's birthday and my whole family relished it with gusto.
Served with the gleaming golden-brown roasted Spanish piglet was a big tray of soft, chargrilled capsicums, big chillies and cherry tomatoes plus a jug of balsamic vinegar to balance the overall flavour mix.
Following the Spanish style of service (which also happens to prove the immense crispness from a successful roasting), the chef actually uses a plate to cut the piglet up into small pieces. This is done table-side on a trolley, allowing for ample opportunities to capture the action on video if you like.
