This cake is a traditional Portuguese sponge cake with a Japanese influence to it. It has a golden beige top with a cottony sponge cake below, creating a lovely contrast. This cake is very 'doink doink' bouncy, moist and delicate. It has a subtle hint of honey🍯 which makes it not too sweet yet delicious enough to be eaten alone as it is or with a dollop of strawberry🍓jam.
