There’s are 2 types of oyster omelet: Non-crispy (scrambled eggs kind) and Crispy.
We ordered the crispy version. The plump oysters are fried separately with some garlic and oyster sauce to create a thick consistency that laid on top of the fried eggs. As the sauce slowly soften the crispy eggs, you will get the soft-crisp kind of feeling, delicious!
No wonder it’s under 2018 Michelin Guide.
