As part of the #DilmahTeaInspiredAwards, Gourmet Plus has created an original dish with Southeast Asian roots and a modern twist.

Hailing from Medan, chef brings to the plate big flavours from back home — a Toman fillet is infused with Dilmah's lively Lime & Orange Fusion tea blend before being baked, then sauced with a punchy blend of kecap manis, soy sauce and fiery chilli padi. Shiok!

The fish rests on a bed of quinoa infused with Dilmah's Ceylon Spice Chai which lends it a faint vanilla-like flavour that I'm not entirely convinced of, and the quinoa is just a little too wet for my preference, but I don' particularly mind because I'm too busy with the Toman.
