Loco Moco Don was quite a delight. Can't believe I'm saying this but I loved the rice! The fluffy bed of koshibuki rice, using their houseblend vinegars was so good even on its own, with a little help from their tasty housemade foie gras sauce (made from a 3-stage cooking process, takes 8h of slow-cooking to extract all the goodness out of it!)

Decently sized pan-fried foie gras, pan-seared to perfection. And interestingly, the luncheon meat is made in-house (the whole process takes 2 days) using Nagano pork belly minced fresh, mixed lovingly by hand before curing. It is then slow-cooked. Would like it even better if the texture was less dry, but I loved how meaty it was and without the saltiness we're used to from commercial brands so no guilt here.

Definitely will get this when I'm here again.
