You get to choose from four bases and customise pretty much everything else in your bowl, from the noodle doneness and cut of meat to the garnishes and spice level. The Green King was an unusual but surprisingly good offering, with notes of Italian pesto pasta with a hearty tonkotsu broth. Very satisfying!
