We were very lucky that evening to be treated to Chef Justin's (I wish I could cook like him) special. This cape grim cut was served with celeriac foam, truffle and artichoke caviar. That exterior char was perfect - we saw the fierce fire while they were grilling the steak - yet the interior was perfectly medium rare. With all the starters leading up to this, I'm a happy man.
