Pangium Beef Bourguignon ($26++)
Slow-simmered beef cheeks in a rich, sweet, umami, and earthy stock infused with buah keluak paste, Guinness, port wine, butter, veal jus, carrots, herbs and spices, served over creamy garlic mashed potatoes. The beef texture is between soft and firm, moist yet chewy, resembling pulled meat. While the flavours are intriguing, the beef doesn’t outshine the mashed potatoes with its smooth, creamy, and impeccably refined texture, and its savoury garlic depth leaves a stronger impression than the main itself.
Sweet & Sour Sticky Pork Ribs ($27++)
An unassuming dish that had us second-guessing our order at first glance. With its presentation resembling a chicken chop drenched in black pepper sauce, it was only after checking the ingredients that we confirmed it was indeed pork ribs. The meat is incredibly tender, effortlessly peeling off the bone, with a well-spiced, rubbed exterior. Said to be slow-cooked for 16 hours, oven-roasted, and finished with a stewed sweet and sour sauce with vegetables. Served with roasted baby potatoes, prawn crackers, and achar, though the cracker lacked crispiness.
Duck Confit with Foie Gras ($29++)
I don’t usually have much expectations for duck confit, as it is often aged, dry, and lacking in crisp skin or tenderness. You get me. But this place truly impressed with their version, using succulent Silverhill Irish duck legs, gently slow-cooked in rich duck fat for a silky finish. Crisped to perfection, achieving a golden, crackling exterior while retaining a juicy core. Generously drizzled with a luscious foie gras and red wine sauce, complemented by a bright mandarin orange salsa, indulgent foie gras, and expertly roasted baby potatoes. The meat is exceptionally tender and moist, effortlessly peeling off the bone, packed with deep, flavourful richness.
Katong Lobster Roll ($34++)
After a long wait (thanks to a missed order), the lobster finally made its way to Singapore. 🙄🦞 Toasted brioche roll filled with fresh, chunky, sweet lobster meat, spiced with a local laksa blend of coconut, boiled egg, and lemon, then topped with laksa leaves. Served with fries and mesclun salad drizzled in vinaigrette dressing. The laksa flavour is mild enough to appeal to most, including tourists, as it’s not spicy at all. While the lobster itself was cold, the brioche was hot and crusty on the outside, staying fluffy inside. A nice twist, but not mind-blowing. Thick-cut fries were a highlight, better texture compared to their shoestring version.
