SinnnJi Hainanese Chicken Rice is famous for their Poached Chicken, with the Poaching technique used is perfectly easy to capture the right temperature of achieving the Moist & Tenderness of the meat.
Especially after poaching the Steamed chicken it tend to have a thick layer of jelly under the skin which is the "collagen"!
