The chef seems different. The pasta is no al dente and not much of the truffle note.
A tad disappointing as the portion and offering are so different from that in May 2021. No more wow factor.
Nicely handled unagi hitsumabushi with a bed of shredded omelette and freshly grated wasabi.. we also ordered the truffle Chawamushi from Sushi Kou that went pretty well with this.
Exclusive set of the Clarke Quay outlet. Serving of foie gras was generous. Thick slab of the fatty goodness that was a little charred on the ends. The wakame soup comes with yuzu that helped to negate the greasiness of the foie gras and add a touch of lightness. Lovely!
Ordered large hitsumabushi set but the serving is way way smaller than before compared to my old photo. No more fresh wasabi for a long while which was a shame. Broth was different- the other set with foie gras came with yuzu for a more refreshing note instead. Service was good still and speedier relatively to last time round but the unagi lacked of the old charred edge somehow. Not much of the oomph factor this time round.

Fatty goodness, the melt in your mouth kind of pork that would be perfect to wash down with some sake or red. With Hi Ball, just kinda incomplete.
Preferred the one at Nobu as they have their tendon softer to the extend of melting in my mouth and the daikon is firmer there yet every bite in it releases sweetness and savoury notes. This was tougher tendon and softer daikon n the savory is flat. Not awful just not on point.
Something warm to start the meal. The tsukune tastes better in soup then on skewers. Light and refreshing broth with leek.
Nothing impressive with their sashimi.
Fatty goodness in bowl of egg topped with shredded leek. However, i feel lesser gravy will accentuate the egg taste instead of being lost in a sea of sweet soya.
