Cooked this for 6 pax in Zermatt. An enjoyable experience. White asparagus needs to be cooked properly lest it be bitter. Peeled off skin and cooked them in hot water with salt n butter. Result : crunchy,sweet and juicy. Love it.
Full bodied, savory fish soup. Wish there was more soup. Excellent! The best I ever had was at Nice.
