One of the best pancakes I've ever had. Each bite had a slice of banana and crunch.

Recipe from Spoonful of Fit: 3 tbsp coconut flour, 3 egg whites, 1/4 tsp baking powder, 1/2 tsp cinnamon, 1/4 tsp almond extract, 1 tbsp Greek yogurt, 1/4 cup unsweetened almond milk, 1 tbsp sugar

1/2 cup quinoa cooked with 1 cup coconut milk. Add 1 tbsp organic brown sugar and 1 tsp cinnamon

Loved the Mackerel & Mint roll. It was such a unique combination; I've never eaten a sushi roll with mint! Flavorful without being too heavy, amd tasted great without soy sauce.

A tad oily, but still really good. I love the extra thin, crunchy crust
