The pork itself is sourced from black Iberian pigs that can be found in the southern part of Portugal and Spain. It was served with ‘Coco de Paimpul’ – haricot beans found in pods. Alongside that are mildly sweet tasting onions originated from the terraced hillsides of the Cévennes mountain range in France. And of course, delicious pork crackling!
Chocolates presented in different tastes and textures. I managed to taste almost all the different intensity levels of cocoa, sweet to bitter and smooth to crunchy. Yum.
A wonderful confit rainbow trout with organic chicken, quinoa and and a lemon dip. The flavours of the trout was brought out nicely. Really good!
This is Jaan's hidden gem. A Wild Mushroom ‘Tea’ where you can enjoy every sip from a transparent cup which also contains sabayon of cep, lovage and walnuts. The fragrance of the tea of was really lovely.
A perfectly cooked heirloom tomato stuffed with oxheart tomatoes, capers, gherkins and oregano. It was cooked sous vide in tomato consommé. Alongside are a collection of ingredients with different textures on the plate. One of the key ingredient was ‘Burrata Artigiana’ – an artisanal french cheese. Really creative!

This was brought out in a cloche (a silver food dome) so I thought that was pretty cool! It was dry aged for at least 35 days in traditional marination. Absolutely loved the presentation, especially with the artistic plate.
This is the main reason for our visit to Les Amis and is probably the highlight for most guests. The angel hair pasta is wrapped around delicately with a balance combination of kombu stock – the king of seaweed. Topped with a generous portion of caviar, two slices of black truffle, edible gold and edible flowers, this is probably the most exquisite combination of ingredients you can ever find in one dish. A really unique sugar sphere dessert with all things chestnut. It can be easily be cracked open with a gentle tap using a spoon. Using a hand blown technique by Pastry Chef Cheryl Koh, Les Amis's sugar sphere desserts cannot be missed!
