I will always recommend Kajiken to people who have never tried mazesoba, the Japanese dry-style ramen casually known as the Japanese Bak Chor Mee, and it has never once failed. As a loyal fan of the Taiwan mazesoba Nagoya style, I always love how flavorful it is with the slight spicy minced pork sauce and the heap of spring onions! Toss in the onsen egg with the chewy noodles for a moist texture. Go for the tender char siew slices as they tear apart so delicately with each bite. Comparatively, the original mazesoba seemed to be bland without the minced pork and spring onions, though it was served with bamboo shoots.
The friendly staff will also recommend you to leave some sauce at the end to mix in with a small portion of rice. Find out for yourself just how well the sauce goes with rice!
