The oysters are replaced by straw mushrooms. It takes some getting used to as the dish lacked the usual flavor of oysters. Nonetheless, we were pleased with the chilli sauce, the crispiness of the egg and the starch wasn't too gooey. Perhaps a bit too pricey for just eggs and mushrooms?
