3 munchies: Intrigued by the menu that says "TCA's signature wafu eggs Benedict sauce" initially, but it got me wondering where the umaminess was from the wafu upon tasting it. While I appreciate the innovation of modern restaurants, some sauces ought to remain as classics like the creamy, buttery Hollandaise with a tinge of acidity.

Sitting on the toasted English muffin was a big slice of Canadian smoked salmon and a nicely (and slowly) poached egg. Just give me the authentic Hollandaise already!
