I swore off any Singaporean renditions of Portuguese egg tarts after having the unbeatable - supposedly original - ones in Lisbon. None I've had back home were remotely as good and I refused to settle for less; until Madeleine's. Madeleine's Portuguese egg tarts had the requisite multi-layered flaky pastry, which I've never seen anywhere else.
Visually distinct layers: check. Wobbly melt-your-mouth custard: check. Amazing brûléed top: check. Bonus points for nailing the right amount of sweetness.
