A pretty and refreshing dessert for a hot day, the sponge was light, and the purée not overly sweet. There was a good balance of textures with some crunch from the brûlée and the biscuit base.
What you must try here is their cold brew tea. Brewed in house, it was probably the best cold brew tea I’ve had in Singapore so far. Cold brewing brings out the natural sweetness of the tea and its ingredients and the pear in the tea I had was forward and fragrant. Their teas are served with a small dish of chestnut purée and cream which was a pleasant start to the meal.
