The Aberdeen Angus Beef used for this outstanding dish at newly opened Scottish restaurant, Usquba, is a winner! So tender, the fillet need no effort at all to slice through, perfectly charred and leading to a blushing pink, then a deeper red core, the meat is succulent and tasty.
